white chicken enchilada recipe Green Chili Cream With Cilantro
- Total Time: 45 minutes
- Yield: 6 servings 1x
- Diet: General
Description
This recipe features tender shredded chicken wrapped in tortillas, bathed in a creamy green chili sauce, and topped with bubbly cheese. It is a family-friendly, satisfying dish perfect for weeknights and meal prep.
Ingredients
- 3 cups (360 g) shredded cooked chicken breast
- 12–16 small corn or flour tortillas
- 8 oz (226 g) cream cheese, softened
- 2 cans (4 oz / 113 g each) diced green chiles, undrained
- 1 cup (240 ml) chicken broth
- 2 cups (226 g) shredded Monterey Jack or Mexican cheese blend
- 0.5 cup (20 g) fresh cilantro, chopped
- Salt, to taste
- Pepper, to taste
Instructions
- Prepare Chicken: Shred cooked chicken breast into bite-sized pieces for even filling.
- Craft Green Chili Sauce: In a blender, combine softened cream cheese, undrained green chiles, chopped cilantro, chicken broth, salt, and pepper. Blend for 5 minutes until the sauce is smooth, light green, and coats a spoon.
- Assemble Enchiladas: Warm tortillas for about 10 seconds each until pliable. Spoon shredded chicken into the center of each tortilla, roll tightly, and place seam-side down in a greased 9×13 inch baking dish.
- Top and Bake: Pour the creamy green chili sauce evenly over the assembled enchiladas. Sprinkle generously with shredded cheese. Bake at 375ยฐF (190ยฐC) for 20-25 minutes, or until bubbly and golden. (If enchiladas appear dry, cover with foil for the last 15 minutes of baking.)
Notes
If sauce is too thick, add 1-2 tablespoons chicken broth. If enchiladas seem dry during baking, cover with foil. A squeeze of lime or dash of cumin can enhance flavor. Use fresh, vibrant cilantro and consider organic chicken for best results.
