  • 0.25 cup (60 g) diced yellow onion, for Fire Salsa (or red onion for a sharper bite)
  • 12 fresh jalapeños, finely chopped, for Fire Salsa (seeds removed for less heat, or left in for extra kick)
  • 1 tbsp (15 ml) fresh lime juice, for Fire Salsa
  • Pinch of salt, for Fire Salsa
  • 1 cup (112 g) shredded cheddar or Mexican blend cheese (a sharp cheddar offers richer flavor)
  • 0.5 cup (60 g) diced tomatoes, for topping
  • 0.25 cup (20 g) sliced green onions, for topping
  • 0.5 inch (1.2 cm) neutral oil, for frying tortillas

Instructions

  1. Preheat Oven And Prepare Salsa: Preheat oven to 400°F (200°C). In a small bowl, combine the 0.5 cup diced ripe tomatoes, 0.25 cup diced yellow onion, 1-2 finely chopped jalapeños, 1 tbsp fresh lime juice, and a pinch of salt to create the Fire Salsa.
  2. Fry Tortillas: Heat 0.5 inch of neutral oil in a 10-inch skillet over medium-high heat until shimmering. Fry tortillas one at a time for 30-60 seconds per side until lightly golden and crisp, then drain on paper towels. Ensure they are very crisp to avoid sogginess.
