Description

Ingredients

  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ยฝ tsp baking soda
  • ยฝ tsp salt

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine 1 ยฝ cups flour, 1 tsp baking powder, ยฝ tsp baking soda, and ยฝ tsp salt.
  2. Mix Wet Ingredients: In another bowl, whisk 1 cup brown sugar, ยฝ cup granulated sugar, ยฝ cup oil, 2 eggs, ยฝ cup buttermilk, and 1 tsp vanilla until just combined.
  3. Combine: Pour wet ingredients into dry ingredients and stir with a rubber spatula until just incorporated.
  4. Add Pecans: Fold in 1 cup toasted pecans with 3-4 strokes. Let batter rest 10 minutes.
  5. Bake: Pour into greased 9×5-inch loaf pan. Bake at 325ยฐF for 60-70 minutes until toothpick comes out clean.
  6. Cool: Let cool in pan 15 minutes, then transfer to wire rack for 1 hour before slicing.
