- 0.5 cup chopped fresh basil
- 2 cups (225g) shredded mozzarella cheese
- 0.5 cup (50g) grated Parmesan cheese
- 1 medium onion, diced
- 3–4 cloves garlic, minced
- Olive Oil
- Salt
- Pepper
- Italian Seasoning
Instructions
- Prep the Sauce: Sautรฉ onion in olive oil until translucent (5-7 minutes). Add garlic, cook 1 minute until fragrant. Stir in crushed tomatoes, 0.25 cup basil, and seasonings. Simmer gently 10 minutes.
- Mix the Ricotta Clouds: Combine ricotta, thoroughly squeezed spinach, 0.25 cup Parmesan, and salt. Mix well.
- Assemble the Lasagna Layers: Spread 0.5 cup sauce in a 9×13 inch baking dish. Layer noodles, then ricotta, sauce, and mozzarella. Repeat 2-3 times, ending with sauce and mozzarella.
- Bake to Perfection: Cover with foil; bake at 375ยฐF (190ยฐC) for 30 minutes. Uncover; bake 10-20 minutes until bubbly and golden brown. Rest 10 minutes before serving.
Notes
For enhanced richness, a tiny pinch of nutmeg can be added to the ricotta mixture. If noodles look dry during assembly, add more sauce to ensure they soften beautifully and prevent hard edges. To expedite assembly on a busy night, use quality jarred marinara and pre-shredded cheese.
