Description

This creamy smoked trout dip is a delightful and easy-to-make appetizer or healthy snack, perfect for gathering friends and family. It features rich smoked trout, a tangy cream cheese base, bright herbs, and a delightful pistachio crunch.

Ingredients

Scale
  • 7 oz hot-smoked trout, skinless and boneless, flaked
  • 8 oz full-fat cream cheese, softened
  • 0.5 cup full-fat sour cream
  • 1 large lemon, zested (1.5 teaspoons) and juiced (2 tablespoons)
  • 1 small shallot, very finely minced
  • 1 teaspoon ground sumac, plus extra for garnish
  • 0.25 cup shelled unsalted pistachios, toasted and roughly chopped
  • 0.25 cup fresh dill, finely chopped, plus small sprigs for garnish
  • 0.25 cup fresh flat-leaf parsley, finely chopped
  • 0.5 teaspoon fine sea salt, or to taste
  • 0.25 teaspoon freshly ground black pepper, or to taste
  • 1 tablespoon extra virgin olive oil, for drizzling

Instructions

  1. Flake Trout: Gently flake the hot-smoked trout into small, bite-sized pieces, looking for any bones or skin that might remain.
  2. Toast Pistachios: Toast the shelled pistachios in a dry skillet over medium heat for 3-5 minutes until fragrant and lightly golden. Allow them to cool completely before roughly chopping them.
  3. Mix Cream Cheese Base: In a medium mixing bowl, combine the softened cream cheese, sour cream, lemon zest, lemon juice, finely minced shallot, 1 teaspoon ground sumac, fine sea salt, and freshly ground black pepper. Mix thoroughly until smooth and well combined.
  4. Fold in Trout and Herbs: Gently fold the flaked smoked trout, finely chopped fresh dill, and finely chopped fresh parsley into the cream cheese mixture. If the dip feels too thick, stir in 1-2 tablespoons more sour cream until it reaches your desired consistency.
  5. Chill Dip: Cover the bowl tightly with cling film and refrigerate for at least 1 hour to allow the flavors to meld and the dip to firm up.
  6. Serve and Garnish: Spoon the chilled dip into a rustic, light-colored ceramic bowl. Create a gentle swirl on the surface with a spoon. Liberally sprinkle the toasted, chopped pistachios over one half, dust the other half lightly with ground sumac, and finish with a delicate drizzle of extra virgin olive oil and a few small sprigs of fresh dill.

Notes

For a lighter version, use light cream cheese and plain Greek yogurt. For dairy-free, use plant-based alternatives. To speed up prep, microwave cream cheese for 15-30 seconds, use pre-flaked trout, or chop herbs in advance. If the dip is too thick, add more lemon juice or sour cream; if too thin, fold in more softened cream cheese and chill longer. Always use fresh dill and parsley, and seek out quality hot-smoked trout for the best flavor.
