- 1 tsp (5ml) olive oil
Instructions
- Prep Cream Cheese: Gently pat the 8 oz cream cheese block dry to help with browning. Score the top with a 0.25-inch criss-cross pattern for flavor penetration.
- Season Cheese: Place on a small sheet pan. Drizzle with 1 tsp olive oil, sprinkle with 1 tbsp seasoning rub and 1 tsp chili flakes; surface should look well coated.
- Smoke Cheese: Transfer to smoker at 225-250F (107-121C). Smoke 1.5-2 hours until softened, golden-brown, and slightly gooey. If not softening evenly, rotate the pan to account for hot spots.
- Finish and Serve: Remove from smoker. Drizzle with 2 tbsp honey, sprinkle with 2 tbsp fresh chives for a vibrant finish; honey melts into the warm cheese.

For dairy-free, use a plant-based vegan cream cheese block. For low-carb/keto, swap honey for a sugar-free substitute and increase chili flakes. Adjust spice using smoked paprika for milder flavor or extra 0.5-1 tsp chili flakes for bolder heat.
