Ingredients
- 1.2 kg (2.6 lb) boneless skinless chicken thighs, trimmed
- 200 ml (0.8 cup) sweet chili sauce
- 15 ml (1 Tbsp) soy sauce (halal certified)
- 2 cloves garlic, minced
- 5 ml (1 tsp) fresh ginger, grated
- 30 ml (2 Tbsp) honey
- 0.5 tsp salt
- 0.25 tsp black pepper
- 120 ml (0.5 cup) coconut milk (full-fat)
- Zest of 1 lime
- 30 ml (2 Tbsp) lime juice
- 5 g (1 tsp) cornstarch mixed with 30 ml (2 Tbsp) water
- 15 ml (1 Tbsp) toasted coconut oil
- 30 g (2 Tbsp) toasted coconut flakes
- 8 g (2 Tbsp) toasted sesame seeds
- 2 Tbsp chopped fresh cilantro
Instructions
- Season Chicken: Trim and season chicken thighs with salt and pepper.
- Make Sauce: Whisk together sweet chili sauce, soy sauce, garlic, ginger, and honey.
- Coat Chicken: Pour sauce over chicken in slow cooker, ensuring it’s well coated.
- Slow Cook: Cook on Low for 6-7 hours or High for 3-4 hours, until tender.
- Prepare Glaze: Combine coconut milk, lime zest, lime juice, and cornstarch slurry in a saucepan.
- Thicken Glaze: Simmer, stirring, until thickened (3-5 minutes).
- Add Coconut Oil: Stir in toasted coconut oil.
- Combine & Heat: Return chicken to slow cooker with glaze and heat for 5 minutes.
- Serve: Garnish with coconut flakes, sesame seeds, and cilantro.
Notes
For best results, use full-fat coconut milk and freshly grated ginger and lime zest. Toasting the coconut flakes and sesame seeds enhances their flavor.
