  • 30 ml (2 Tbsp) honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 120 ml (0.5 cup) coconut milk (full-fat)
  • Zest of 1 lime
  • 30 ml (2 Tbsp) lime juice
  • 5 g (1 tsp) cornstarch mixed with 30 ml (2 Tbsp) water
  • 15 ml (1 Tbsp) toasted coconut oil
  • 30 g (2 Tbsp) toasted coconut flakes
  • 8 g (2 Tbsp) toasted sesame seeds
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Season Chicken: Trim and season chicken thighs with salt and pepper.
  2. Make Sauce: Whisk together sweet chili sauce, soy sauce, garlic, ginger, and honey.
  3. Coat Chicken: Pour sauce over chicken in slow cooker, ensuring it’s well coated.
  4. Slow Cook: Cook on Low for 6-7 hours or High for 3-4 hours, until tender.
  5. Prepare Glaze: Combine coconut milk, lime zest, lime juice, and cornstarch slurry in a saucepan.
  6. Thicken Glaze: Simmer, stirring, until thickened (3-5 minutes).
  7. Add Coconut Oil: Stir in toasted coconut oil.
  8. Combine & Heat: Return chicken to slow cooker with glaze and heat for 5 minutes.
  9. Serve: Garnish with coconut flakes, sesame seeds, and cilantro.

Notes
