- Total Time: 20 minutes
- Yield: 4 servings 1x
- Diet: Pescatarian, Gluten-Free
Description
This Lemon-Garlic Shrimp Scampi with Parsley Sparks is a quick, flavorful dish perfect for busy weeknights, offering vibrant flavors in under 20 minutes for family dinners or healthy meal prep.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 4 tbsp unsalted butter
- 2 tbsp extra virgin olive oil
- 4 cloves fresh garlic, minced
- 1 lemon, juiced and zested
- 0.5 cup dry white wine or chicken broth
- 0.25 cup fresh parsley, chopped
- 0.5 tsp red pepper flakes (optional)
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- Prep Shrimp: Pat the shrimp very dry with paper towels. Season lightly with salt and freshly ground black pepper.
- Sautรฉ Aromatics: In a large 10-inch skillet over medium heat, melt 2 tbsp butter with 2 tbsp olive oil. Add the minced garlic and red pepper flakes (if using). Cook for 1 minute until fragrant, being careful not to let the garlic burn.
- Cook Shrimp: Add the prepared shrimp to the skillet in a single layer. Cook for just 1-2 minutes per side until they turn pink and opaque. Remove the shrimp from the pan and set aside.
- Build Sauce: Add the white wine or chicken broth to the hot pan, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes until slightly reduced.
- Finish Sauce: Stir in the remaining 2 tbsp butter, fresh lemon juice, and lemon zest until the butter is completely melted and the sauce appears glossy. Return the cooked shrimp to the pan.
- Serve: Stir in the fresh parsley. Toss gently to coat all the shrimp evenly in the vibrant sauce. Serve immediately.
Notes
For dryness, add a splash more broth or reserved pasta water to loosen the sauce. For blandness, boost flavor with more fresh lemon juice or zest, a pinch more salt, or fresh herbs. For sogginess, ensure shrimp are very dry before cooking and avoid overcrowding the pan; cook in batches if necessary.
