- 340 g (12 ounces) fettuccine or linguine pasta (reserve 1/2 cup pasta water)
- 450 g (1 pound) large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 85 g (6 tablespoons) unsalted butter
- 4 cloves garlic, minced
- 500 ml (2 cups) heavy cream
- 170 g (1.5 cups) freshly grated Parmesan cheese
- 1 teaspoon sea salt
- 0.5 teaspoon freshly ground black pepper
- 190 g (7 ounces) jarred roasted red peppers, drained
- 60 ml (0.25 cup) low-sodium vegetable broth
- 1 teaspoon smoked paprika
- 0.25 cup fresh flat-leaf parsley, chopped
Instructions
- Cook Pasta: Boil fettuccine until al dente in heavily salted water. Reserve 1/2 cup of starchy pasta water, then drain the pasta.
- Sear Shrimp: Pat shrimp dry. Heat olive oil in a skillet over medium-high heat. Sear shrimp in batches for 2-3 minutes per side until opaque and pink. Remove shrimp and set aside.
- Prepare Alfredo Sauce: Melt butter in the same pan over medium heat. Sautรฉ minced garlic for 1 minute. Reduce heat to low, pour in heavy cream, and bring to a gentle simmer. Whisk in grated Parmesan cheese gradually until smooth, then season with salt and pepper.
- Make Pepper Swirl: In a blender, combine roasted red peppers, vegetable broth, and smoked paprika. Blend until completely smooth. Warm the sauce slightly.
- Combine Ingredients: Add cooked pasta and seared shrimp back into the skillet with the alfredo sauce. Toss gently to combine, adding reserved pasta water as necessary to reach desired consistency.
- Swirl and Serve: Pour the warmed red pepper sauce over the pasta. Gently swirl with tongs to create ribbons. Serve immediately, garnished with fresh parsley and extra Parmesan.
