- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 0.5 cup granulated sugar
- 2 tsp fresh lemon zest

Instructions
- Preheat Oven & Prepare Baking Sheet: Preheat your oven to 350 degrees F (175 degrees C). Line a standard baking sheet with parchment paper.
- Cream Butter & Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy (3-5 minutes). Stir in the fresh lemon zest until fragrant.
- Combine Dry Ingredients: Gradually add the all-purpose flour and salt to the wet ingredients, mixing on low speed until just combined and a soft dough forms. Avoid overmixing.
- Shape & Cut Dough: Gently press the dough into an even disk about 0.5 inch thick, or roll it out to 0.25 inch thickness. Use cookie cutters or slice into shortbread fingers. Chill dough for 20-30 minutes before baking if cookies are spreading.
- Bake Cookies: Place the shaped cookies on the prepared baking sheet. Bake for 12-15 minutes, or until the edges are lightly golden and centers are set.
- Cool & Dust: Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Lightly dust with powdered sugar once fully cooled.
Notes
