Ingredients
- 0.45 kg sweet potatoes, sliced (ยฝ-inch rounds)
- 45 ml olive oil
- 5 g smoked paprika
- 2 g ground cumin
- Salt & pepper (to taste)
- 200 g firm feta cheese, cubed
- 30 ml honey
- 15 ml pomegranate molasses
- 5 ml fresh lemon juice
- 1 g ground sumac (optional)
- Fresh mint leaves (for garnish)
Instructions
- Preheat & Prep: Preheat oven to 200ยฐC (400ยฐF) and line baking sheets with parchment.
- Season Potatoes: Toss sweet potato rounds with olive oil, paprika, cumin, salt, and pepper. Spread on a baking sheet.
- Make Glaze: Whisk honey, pomegranate molasses, lemon juice, and sumac (if using). Reserve half.
- Glaze & Roast: Toss feta with reserved glaze. Roast potatoes (20-25 mins) and feta (8-10 mins), turning potatoes halfway.
- Assemble & Garnish: Arrange potatoes, top with feta, drizzle with glaze, and garnish with mint.
Notes
For best results, slice sweet potatoes to a consistent thickness and avoid overcrowding the baking sheet. Roasting intensifies their natural sweetness.
