- 150 g plain breadcrumbs
- 150 ml whole milk
- 2 large eggs
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp Worcestershire sauce (halal) or soy sauce
- 1 tbsp Dijon mustard (alcohol-free)
- 2 tbsp ketchup
- 1 tbsp brown sugar
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 150 g pepper jack cheese, shredded
- 150 g provolone cheese, shredded
- 2 medium onions, thinly sliced
- 2 tbsp olive oil
- 2 tbsp horseradish (prepared, no alcohol)
- 120 ml sour cream
- 1 tsp lemon juice
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat and Prep: Preheat oven to 180ยฐC (350ยฐF) and grease a loaf pan.
- Caramelize Onions: Cook sliced onions in olive oil for 20-25 minutes until golden brown. Reserve half for swirl and garnish.
- Combine Ingredients: Gently mix beef, breadcrumbs, milk, eggs, seasonings, sauce, and peppers.
- Make Cheese Swirl: Combine pepper jack and reserved caramelized onions.
- Assemble Meatloaf: Layer half the meat, cheese mixture, then remaining meat in a loaf shape.
- Bake: Bake for 55-65 minutes until internal temperature reaches 71ยฐC (160ยฐF).
- Rest & Sauce: Rest for 10 minutes, then make horseradish cream sauce.
- Serve: Slice, drizzle with sauce, garnish with onions and parsley.
