- 4 fillets (150g / 5oz each) white fish, skin on
- 1 tbsp (15ml) vegetable oil
- 3 tbsp (45g) unsalted butter, room temperature
- 2 cloves garlic, minced (โ1 tsp)
- Zest and juice of 1 lime (โ2 tbsp / 30ml + 1 tbsp extra juice + zest of ยฝ lime)
- 1 tsp fish sauce
- 1 tsp honey
- Salt and pepper to taste
- 100ml (3.4 fl oz) full-fat coconut milk
- 1 tsp red chili flakes
- 1 tsp granulated sugar
- 1 tsp cornstarch + 1 tsp water
- 2 tbsp (20g) toasted coconut flakes
- 1 tbsp (5g) fresh cilantro, chopped
- Lime wedges for serving
Instructions
- Prepare Fish: Pat fish dry and season with salt and pepper.
- Sear Fish: Sear skin-side down in hot oil for 3-4 minutes until crispy.
- Baste with Butter: Flip fish, add butter, garlic, lime zest, juice, fish sauce, and honey; baste for 2-3 minutes.
- Make Coconut Drizzle: Simmer coconut milk, lime juice, zest, chili flakes, and sugar.
- Thicken Sauce: Whisk cornstarch slurry into simmering sauce; cook until thickened.
- Plate and Garnish: Plate fish skin-side up, drizzle with sauce, and garnish with coconut flakes and cilantro.
- Serve: Serve immediately with lime wedges.
Notes
For extra crispy skin, ensure the fish is very dry before searing and resist moving it in the pan. Adjust chili flakes to your spice preference.
