Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 0.5 cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 1.5 cups all-purpose flour
- 3 cups rolled oats, old-fashioned preferred
- 1 tsp baking soda
- 0.5 tsp salt
- 1.5 cups raisins
Instructions
- Preheat Oven & Prepare Sheets: Preheat your oven to 375F (190C). Line two large baking sheets with parchment paper or silicone mats.
- Cream Wet Ingredients: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer until the mixture is light and fluffy (2-3 minutes).
- Add Eggs & Vanilla: Beat in eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Combine Dry Ingredients: In a separate medium bowl, whisk together the flour, baking soda, and salt until evenly combined.
- Mix Dough: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Stir in Oats & Raisins: Stir in the rolled oats and the raisins until they are evenly distributed throughout the dough.
- Portion & Bake: Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies. Bake for 10-12 minutes, or until the edges appear golden brown and the centers are still slightly soft.
- Cool Cookies: Let the baked cookies cool on the baking sheets for 5 minutes; then, transfer them to a wire rack to cool completely.
Notes
If cookies spread too much, chill the dough for 30 minutes before baking. A stand mixer can simplify dough preparation. Store cooled cookies in an airtight container at room temperature.
