Instructions

- Combine Wet Ingredients: Whisk eggs, sugar-free ketchup (reserve some for glaze), Worcestershire, salt, and pepper until blended. This ensures even seasoning.
- Add Dry and Mix: Add ground meat, almond flour, onion, garlic, and herbs. Mix gently with hands; (do not overmix, as this can lead to a tough, dense low carb meatloaf). Mixture should feel barely cohesive.
- Form the Loaf: Transfer meat mixture evenly into the prepared loaf pan, pressing gently. Alternatively, shape free-form on a baking sheet.
- First Bake: Place loaf pan in preheated oven for 30 minutes. Edges will firm and lightly brown.
- Glaze and Finish Baking: Remove the low carb meatloaf. Spread reserved sugar-free ketchup glaze evenly. Return to oven for 20-30 minutes, or until 71ยฐC (160ยฐF) internal temperature. Glaze will caramelize beautifully.
