  • 115g / ยฝ cup unsalted butter, cubed

  • 1 tsp smoked paprika (โ‰ˆ5g)
  • ยฝ tsp red pepper flakes (โ‰ˆ2g)
  • 1 tsp lemon zest (zest of 1 lemon)
  • 2 tbsp fresh parsley (โ‰ˆ8g), chopped
  • ยฝ tsp salt (โ‰ˆ3g)
  • ยผ tsp black pepper (โ‰ˆ1g, freshly ground)
  • 1 tbsp olive oil (โ‰ˆ15ml)
  • Extra parsley, smoked paprika, lemon wedges for garnish

Instructions

  1. Prepare Lobster Tails: Cut shells lengthwise, gently separate meat, leaving it connected at the tail fin.
  2. Season Lobster Meat: Brush with olive oil, season with salt and pepper.
  3. Make Smoky Cowboy Butter: Melt butter, sautรฉ garlic and shallot until fragrant.
  4. Infuse Butter with Flavor: Stir in smoked paprika, red pepper flakes, lemon zest, salt, and pepper.
  5. Finish Cowboy Butter: Remove from heat, stir in parsley. Reserve some for glazing.
  6. Butter the Lobster: Generously brush lobster meat with two-thirds of the butter.
  7. Grill or Broil Lobster: Grill/broil flesh-side down for 4-5 minutes, flip, brush with remaining butter, cook 3-4 minutes until opaque.
  8. Serve and Garnish: Transfer to a plate, drizzle with butter, sprinkle with paprika and parsley, serve with lemon wedges.
