  • 8 oz full-fat cream cheese, softened
  • 0.5 cup full-fat mayonnaise
  • 0.5 cup full-fat sour cream (or Greek yogurt)
  • 1.5 cups sharp cheddar cheese, freshly shredded
  • 1 cup monterey jack cheese, freshly shredded
  • 2 tablespoons unsalted butter
  • 0.5 cup yellow onion, finely minced
  • 2 cloves garlic, minced
  • 2 teaspoons sweet smoked paprika, divided
  • 1 teaspoon fresh lime zest, plus more for garnish
  • 1 tablespoon fresh lime juice
  • 1 teaspoon coarse sea salt, divided
  • 0.5 teaspoon freshly ground black pepper
  • 1 cup panko breadcrumbs
  • 2 tablespoons melted unsalted butter
  • 0.5 cup fresh cilantro, chopped, for garnish
  • 1 teaspoon vegetable-based chili oil, for garnish

Instructions

  1. Preheat Oven & Prepare Dish: Preheat your oven to 375F (190C). Lightly grease a 1-quart (1-liter) oven-safe baking dish.
  2. Sautรฉ Aromatics: In a medium skillet, melt 2 tablespoons unsalted butter over medium heat. Add the finely minced yellow onion and sautรฉ for 5-7 minutes until soft and translucent. Add the minced garlic and sautรฉ for 1 minute until fragrant. Remove from heat and set aside to cool slightly.
  3. Combine Creamy Base: In a large mixing bowl, combine the softened cream cheese, mayonnaise, sour cream, shredded Cheddar, shredded Monterey Jack, the cooled onion and garlic mixture, 1 teaspoon sweet smoked paprika, 1 teaspoon fresh lime zest, 1 tablespoon fresh lime juice, 0.5 teaspoon coarse sea salt, and 0.5 teaspoon black pepper. Mix until well combined, creamy, and smooth.
  4. Fold in Lobster: Gently fold in the chopped lobster meat, being careful not to overmix to preserve its tender texture.
  5. Assemble Dip: Spoon the lobster mixture evenly into the prepared baking dish, ensuring it’s spread from edge to edge.
  6. Prepare Panko Topping: In a small bowl, combine the panko breadcrumbs, 2 tablespoons melted unsalted butter, the remaining 1 teaspoon sweet smoked paprika, and the remaining 0.5 teaspoon coarse sea salt. Stir until the panko is evenly coated.
  7. Bake Until Golden: Sprinkle the spiced panko crumble evenly over the top of the lobster dip. Bake for 20-25 minutes, or until the dip is hot and bubbly around the edges and the panko crumble is golden brown and crisp on top.
  8. Rest & Serve: Remove the dish from the oven and let it rest for 5 minutes before serving directly in its baking dish.
