  • 30 ml (2 Tbsp) lemon-mint glaze (15 ml lemon juice, 15 ml honey, 1 g cornstarch dissolved in water)
  • 1 tsp candied lemon peel, for garnish
  • Extra mint sprig, for garnish

Instructions

  1. Make Simple Syrup: Combine sugar, water, lemon zest, and mint leaves in a saucepan. Heat until sugar dissolves, steep for 5 minutes, and strain.
  2. Prepare Lemon-Mint Glaze: Whisk lemon juice, honey, and cornstarch solution. Heat gently until thickened.
  3. Muddle Mint & Citrus: Gently muddle mint leaves with lime and lemon juice in a glass.
