- 15 ml (1 Tbsp) lemon juice, freshly squeezed
- 50 g (ยผ cup) granulated sugar, adjust to taste
- 50 ml (ยผ cup) water, for simple syrup
- Zest of 1 lemon, yellow part only
- 5 g (โ5) mint leaves, for simple syrup infusion
- 200 ml (7 fl oz) sparkling water, good quality
- โ1 cup (240 ml) ice cubes
- 30 ml (2 Tbsp) lemon-mint glaze (15 ml lemon juice, 15 ml honey, 1 g cornstarch dissolved in water)
- 1 tsp candied lemon peel, for garnish
- Extra mint sprig, for garnish
Instructions
- Make Simple Syrup: Combine sugar, water, lemon zest, and mint leaves in a saucepan. Heat until sugar dissolves, steep for 5 minutes, and strain.
- Prepare Lemon-Mint Glaze: Whisk lemon juice, honey, and cornstarch solution. Heat gently until thickened.
- Muddle Mint & Citrus: Gently muddle mint leaves with lime and lemon juice in a glass.
- Assemble Mocktail: Fill glass with ice, add simple syrup, and top with sparkling water. Stir gently.
- Create Citrus Swirl: Drizzle cooled glaze over the mocktail surface.
- Garnish & Serve: Garnish with mint and candied lemon peel. Serve immediately.
