  • 1 Large Egg
  • 1 tsp (5 ml) Alcohol-Free Vanilla Extract
  • 2 tsp Lemon Zest
  • 2 Tbsp (30 ml) Fresh Lemon Juice
  • 150g (1 cup) Fresh Blueberries, tossed in 1 Tbsp Flour
  • 100g (3ยฝ oz) White Chocolate Chips (optional)
  • 60g (ยฝ cup) Powdered Sugar
  • 1 Tbsp (15 ml) Fresh Lemon Juice (for glaze)
  • 2 Tbsp (30 ml) Water
  • 30g (2 Tbsp) Blueberry Jam or Puree
  • 1 Tbsp (โ‰ˆ10g) Sliced Toasted Almonds
  • Lemon Zest for Garnish (optional)

Instructions

  1. Preheat & Prep: Preheat oven to 175ยฐC (350ยฐF) and line baking sheets with parchment paper.
  2. Combine Dry Ingredients: Whisk flour, baking soda, and salt in a bowl.
  3. Cream Butter & Sugars: Cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add Wet Ingredients: Beat in egg, vanilla, lemon zest, and lemon juice.
  5. Incorporate Flour: Gradually add dry ingredients, mixing until just combined.
  6. Fold in Blueberries & Chocolate: Gently fold in blueberries and chocolate chips.
  7. Scoop & Bake: Scoop dough onto baking sheets and bake for 12-14 minutes.
  8. Cool Cookies: Cool on sheets for 5 minutes, then transfer to a wire rack.
  9. Make Glaze: Whisk powdered sugar, lemon juice, and water until smooth; stir in blueberry jam.
