- 500g raw shrimp, peeled and deveined, tails on
- 120g all-purpose flour
- 5g kosher salt
- 2.5g ground black pepper
- 2g smoked paprika
- 1 large egg
- 60ml cold water
- 200ml vegetable oil
- 80ml honey
- 30ml fresh lime juice
- 1 tsp lime zest
- 5ml toasted sesame oil + 1 tbsp optional
- 2g red pepper flakes (optional)
- 30g toasted white sesame seeds
Instructions
- Prepare Shrimp: Pat shrimp dry with paper towels.
- Combine Dry Ingredients: Whisk flour, salt, pepper, and paprika.
- Prepare Egg Wash: Whisk egg with cold water.
- Coat Shrimp: Dip shrimp in egg wash, then flour, shaking off excess.
- Heat Oil: Heat oil to 180ยฐC (350ยฐF).
- Fry Shrimp: Fry in batches for 2-3 minutes, turning once.
- Drain Shrimp: Drain on paper towels.
- Make Glaze: Whisk honey, lime juice, zest, sesame oil, and pepper flakes.
- Glaze & Coat: Toss shrimp in glaze, then sesame seeds.
- Serve: Garnish and serve immediately.
Notes
Toasting sesame seeds enhances their flavor. Adjust red pepper flakes to your spice preference.
