Ingredients
- 500 g ground chicken (halal certified)
- 4 cloves garlic, minced
- 100 g grated cheddar cheese (halal certified)
- 100 g cream cheese, softened (halal certified)
- 50 g sun-dried tomatoes, chopped
- 2 tbsp fresh basil, chopped
- 100 g breadcrumbs
- 1 large egg
- 60 ml whole milk
- 1 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp smoked paprika
- 2 tbsp olive oil (plus 1 tbsp for glaze)
- 2 cloves garlic, grated (for glaze)
- 30 g toasted breadcrumbs with garlic & olive oil
- Fresh parsley, chopped for garnish
Instructions
- Preheat & Prep: Preheat oven to 190ยฐC (375ยฐF) and line a baking sheet with parchment paper.
- Combine Chicken: Gently mix chicken, garlic, cheese, breadcrumbs, egg, milk, salt, pepper, and paprika.
- Make Tomato Swirl: Blend cream cheese, sun-dried tomatoes, and basil; season lightly.
- Assemble Meatloaf: Spread chicken mixture, add tomato swirl, and fold to enclose.
- Initial Bake: Bake for 35 minutes, brushing with 1 tbsp olive oil.
- Prepare Glaze: Combine remaining olive oil, grated garlic, and paprika.
- Glaze & Finish: Brush with glaze and bake 10-12 minutes until cooked through.
- Toast Breadcrumbs: Toast breadcrumb mixture until golden brown.
- Rest & Slice: Rest for 10 minutes before slicing.
- Serve & Garnish: Slice, drizzle with glaze, sprinkle with breadcrumbs & parsley.
