- 4 slices bread (120g), sturdy white or sourdough
- 2 Tbsp unsalted butter (30g), softened
- 2 cloves garlic, minced
- 1 Tbsp olive oil (15ml)
- ยฝ cup shredded mozzarella cheese (60g)
- ยฝ cup shredded cheddar cheese (60g)
- ยผ cup roasted red pepper basil cream cheese (60g)
- 1 tsp smoked paprika or chili flakes (5g)
- 2 Tbsp fresh chives, chopped (30g)
- 1 tsp extra-virgin olive oil (optional, 5ml)
Instructions
- Make Garlic Butter: Combine butter, garlic, and olive oil until smooth.
- Butter Bread: Spread garlic butter on one side of each bread slice.
- Add Cream Cheese: Spread roasted red pepper cream cheese on the unbuttered side of two slices.
- Layer Cheeses: Distribute mozzarella and cheddar over the cream cheese.
- Assemble Sandwich: Top with remaining bread slices, buttered sides out.
- Cook First Side: Cook in a skillet over medium heat for 2-3 minutes until golden brown.
- Add Spice & Cook Second Side: Flip, sprinkle with paprika/flakes, and cook for 2-3 minutes until cheese is melted.
- Rest & Cut: Let rest for 1 minute, then cut diagonally.
- Plate & Garnish: Plate and drizzle with olive oil, sprinkle with chives.
