Instructions

  1. Sauté Corn: Heat a large 10-inch skillet over medium-high. Add corn and cook, stirring occasionally, until slightly charred and tender-crisp (5-7 min).
  2. Prepare Wet Ingredients: In a large bowl, whisk together mayonnaise, sour cream, fresh lime juice, and a pinch of cayenne (if using).
  3. Combine And Mix: Add the sautéed corn, crumbled Cotija, and chopped cilantro to the wet ingredients. Mix well until everything is evenly coated. (If the mixture seems too dry, a splash of lime juice or a teaspoon of mayo can help).
  4. Season And Serve: Stir in 1-2 tsp of Tajín. Taste and adjust seasoning, adding more lime, Tajín, or salt as needed. Serve immediately or chill.
