Ingredients
- 3 cups sweet corn, frozen or fresh (kernels removed)
- 0.5 cup cotija cheese, crumbled (or crumbled feta)
- 0.5 cup mayonnaise (light mayo or Greek yogurt for extra protein works well)
- 0.25 cup sour cream (or plain Greek yogurt)
- 0.25 cup fresh cilantro, chopped
- 1–2 limes, juiced
- 2–3 tsp Tajín Clásico Seasoning, or to taste
- Pinch of cayenne (optional)
Instructions
- Sauté Corn: Heat a large 10-inch skillet over medium-high. Add corn and cook, stirring occasionally, until slightly charred and tender-crisp (5-7 min).
- Prepare Wet Ingredients: In a large bowl, whisk together mayonnaise, sour cream, fresh lime juice, and a pinch of cayenne (if using).
- Combine And Mix: Add the sautéed corn, crumbled Cotija, and chopped cilantro to the wet ingredients. Mix well until everything is evenly coated. (If the mixture seems too dry, a splash of lime juice or a teaspoon of mayo can help).
- Season And Serve: Stir in 1-2 tsp of Tajín. Taste and adjust seasoning, adding more lime, Tajín, or salt as needed. Serve immediately or chill.
Notes
For health-forward upgrades, use organic corn, light mayo/sour cream, plain Greek yogurt, or grass-fed dairy. Look for low-sodium Cotija. For Keto/Low-Carb versions, use less corn. For Vegan, use plant-based mayo/sour cream and nutritional yeast. For Diabetic-Friendly, use fresh corn and measure portions carefully. Corn can be oven roasted at 400°F (200°C) for 20-25 minutes or air-fried at 375°F (190°C) for 10-15 minutes.
