- 450 g (1 lb) fresh strawberries, firm ripe berries with stems intact
- 200 g (7 oz) dark chocolate (60–70 percent cacao), chopped
- 100 g (3.5 oz) white chocolate, chopped
- 60 ml (0.25 cup) heavy cream
- 0.5 g (0.25 tsp) saffron threads, crushed
- 0.25 g (0.125 tsp) ground cardamom
- 5 ml (1 tsp) refined coconut oil (optional)
- Extra saffron threads, for garnish
Instructions
- Prepare Strawberries: Ensure 450 g (1 lb) fresh strawberries are completely dry; moisture will cause chocolate to seize. Line a 9×13 baking sheet with parchment paper.
- Melt Dark Chocolate: Gently melt 200 g (7 oz) chopped dark chocolate (60-70 percent cacao) over simmering water; stir until smooth and glossy. For extra shine, stir in 5 ml (1 tsp) coconut oil.
- Dip And Set: Hold each strawberry by its stem, dip into warm chocolate, tap to remove excess. Place on the prepared sheet. Refrigerate for 15-20 minutes until firm.
- Infuse Drizzle Cream: Heat 60 ml (0.25 cup) heavy cream until just simmering. Remove from heat, add 0.5 g (0.25 tsp) crushed saffron and 0.25 g (0.125 tsp) ground cardamom; steep for 10-15 minutes for vibrant color and aroma.
- Create Drizzle: Melt 100 g (3.5 oz) white chocolate until smooth. Strain the infused cream into it, whisking until golden and combined.
- Drizzle And Chill: Remove set dark chocolate strawberries from the fridge. Using a spoon, generously drizzle the warm saffron-cardamom mixture in an artistic pattern. Let set at room temperature or briefly chill for 5-10 minutes.
- Serve And Garnish: Arrange your stunning strawberries on a dark plate to highlight vibrant colors. Place extra saffron threads on top for an elegant touch.
