Instructions

  1. Sautรฉ Aromatics: In your 6-quart soup pot, heat olive oil over medium heat. Add chopped onion and cook until softened (about 3-4 minutes), turning translucent. Stir in minced garlic and dried thyme, cooking for another minute until fragrant.
  2. Build Mushroom Flavor: Add the sliced mushrooms to the pot. Cook, stirring occasionally, until mushrooms release their liquid and start to brown (about 7-8 minutes), developing a rich color. Pour in the vegetable broth and bring to a gentle simmer.
  3. Blend Soup Until Silky: Remove the pot from heat. Carefully transfer the soup mixture to a high-speed blender, or use an immersion blender directly in the pot. Blend until perfectly smooth and silky.
  4. Thicken And Season: Return the blended soup to the pot (if using a stand blender). Stir in the plant-based milk and the tapioca starch slurry.
