- 1 cup full-fat plant-based milk (oat, cashew, or unsweetened almond)
- 2 tbsp tapioca starch or cornstarch
- 2 tbsp cold water, for slurry
- 1 tsp dried thyme
- Salt and black pepper, to taste
- Fresh parsley or chives, for garnish
Instructions
- Sautรฉ Aromatics: In your 6-quart soup pot, heat olive oil over medium heat. Add chopped onion and cook until softened (about 3-4 minutes), turning translucent. Stir in minced garlic and dried thyme, cooking for another minute until fragrant.
- Build Mushroom Flavor: Add the sliced mushrooms to the pot. Cook, stirring occasionally, until mushrooms release their liquid and start to brown (about 7-8 minutes), developing a rich color. Pour in the vegetable broth and bring to a gentle simmer.
- Blend Soup Until Silky: Remove the pot from heat. Carefully transfer the soup mixture to a high-speed blender, or use an immersion blender directly in the pot. Blend until perfectly smooth and silky.
- Thicken And Season: Return the blended soup to the pot (if using a stand blender). Stir in the plant-based milk and the tapioca starch slurry. Cook over medium-low heat, stirring constantly, until the soup thickens to your desired luscious consistency, typically coating the back of a spoon. Season generously with salt and black pepper to taste.
Notes
If soup is too thin, add more starch slurry; if too thick, add more broth or milk; if gritty, blend longer. For richer flavor, use cashew milk/coconut cream or nutritional yeast. Fresh or rehydrated porcini mushrooms can enhance depth.
