Description

These air fryer mushrooms are coated in a savory-sweet miso-ginger glaze for a quick and flavorful side dish or appetizer. They’re crispy, umami-rich, and perfect for any occasion.


Ingredients

  • 400g (14oz) Mixed Baby Mushrooms, cleaned and dried
  • 2 Tbsp (30ml) Olive Oil
  • 1 tsp (5g) Sea Salt
  • ยฝ tsp (2.5g) Black Pepper
  • 2 Tbsp (30g) White Miso Paste
  • 1 Tbsp (15ml) Maple Syrup
  • 1 tsp (5ml) Soy Sauce
  • 1 tsp (5ml) Rice Vinegar
  • 1 tsp (5g) Freshly Grated Ginger
  • 1 Clove Garlic, minced
  • ยผ tsp (0.5g) Chili Flakes (optional)
  • 1 tsp (5ml) Toasted Sesame Oil
  • 1 tsp (5g) Toasted Sesame Seeds, plus extra for garnish
  • 1 Tbsp (5g) Chopped Scallions

Instructions

  1. Prep Mushrooms: Clean and dry mushrooms; avoid soaking.
  2. Season Mushrooms: Toss mushrooms with olive oil, salt, and pepper.
  3. First Air Fry: Air fry at 180ยฐC (350ยฐF) for 12 minutes, shaking halfway.
  4. Make Glaze: Whisk miso paste, maple syrup, soy sauce, rice vinegar, ginger, garlic, chili flakes, and sesame oil.
  5. Simmer Glaze: Simmer glaze over medium-low heat for 3-4 minutes until thickened.
  6. Glaze Mushrooms: Toss air fried mushrooms with half of the glaze.
  7. Second Air Fry: Air fry glazed mushrooms for 2 minutes to caramelize.
  8. Plate & Garnish: Arrange mushrooms, drizzle with remaining glaze, and garnish with sesame seeds and scallions.
  9. Serve: Serve immediately while warm.
