- 2 firm-ripe pears, peeled, cored, and diced

Instructions
- Prep Baking Dish and Oven: Preheat your oven to 350 degrees F (175 degrees C). Lightly grease an 8×8 inch square baking dish with butter.
- Make the Salted Caramel Base: Combine 0.5 cup granulated sugar and 2 tablespoons water in a medium saucepan. Cook over medium-high heat until the sugar dissolves and turns a deep amber caramel color (about 5-8 minutes). Remove from heat, then carefully add the cubed butter and heavy cream (it will bubble vigorously). Stir until smooth, then stir in the sea salt. Remove about 2-3 tablespoons of the caramel sauce and set aside for garnish.
- Prepare the Pear Swirl: Add the diced pears, ground cinnamon, and ground nutmeg to the saucepan with the remaining caramel sauce. Stir gently to coat the pears. Set aside while preparing the pudding batter.
- Prepare the Pudding Batter: In a food processor, combine the cottage cheese, eggs, 0.5 cup granulated sugar, all-purpose flour, vanilla extract, lemon zest, and 2 tablespoons melted butter. Process until mostly smooth with only very tiny curds remaining (about 1-2 minutes), scraping down the sides as needed.
- Layer and Swirl: Pour half of the cottage cheese batter into the prepared baking dish, spreading evenly. Dollop spoonfuls of the caramel pear mixture over the batter. Carefully pour the remaining cottage cheese batter over the pear mixture. Use a butter knife or skewer to gently swirl the caramel pear mixture into the batter 2-3 times.
- Bake: Bake for 45-55 minutes, or until the pudding is set around the edges and lightly golden brown on top. The center should still have a slight wiggle when shaken gently.
- Cool and Serve: Remove from oven and let the pudding cool in the dish for at least 15-20 minutes before slicing. Serve warm or at room temperature, drizzling with the reserved salted caramel sauce just before serving.
