Ingredients
- 1 pre-baked pizza crust (10–12 inch)
- 400 g full-fat cottage cheese
- 150 g shredded low-moisture mozzarella cheese
- 2 red bell peppers (approx. 300g total)
- 2 cloves garlic
- 3 tbsp olive oil, divided (2 tbsp for sauce, 1 tbsp for crust)
- 1 tsp smoked paprika
- 1 tsp apple cider vinegar
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper
- Fresh basil leaves, for garnish
Instructions
- Roast Peppers and Preheat Oven: Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper. Char the red bell peppers by placing them over a gas flame or under a broiler, turning until fully blackened. Immediately transfer the charred peppers to a bowl, cover tightly, and steam for 10-15 minutes to loosen the skin.
- Prepare Roasted Red Pepper Swirl Sauce: Once cool enough, remove the charred skin, stems, and seeds from the peppers. Blend the peeled peppers, garlic cloves, 2 tablespoons of olive oil, smoked paprika, apple cider vinegar, and a pinch of salt until smooth. Set aside.
- Prepare Cottage Cheese Base: In a medium bowl, combine the cottage cheese, dried oregano, salt, and pepper. Mix gently to combine without overmixing.
- Assemble the Pizza: Place the pre-baked crust on the baking sheet. Brush the crust lightly with the remaining 1 tablespoon of olive oil. Spread the seasoned cottage cheese mixture evenly over the crust, leaving a small border.
- Create Swirl Effect: Dollop spoonfuls of the red pepper sauce over the cottage cheese layer. Use a knife or skewer to gently swirl the sauce into the cottage cheese to create a marbled pattern. Sprinkle the mozzarella cheese evenly over the top.
- Bake and Serve: Bake for 15-20 minutes, or until the mozzarella is melted and bubbly and the crust edges are golden brown. Let the pizza rest for 2-3 minutes before slicing. Garnish with fresh basil leaves before serving.
