- 2 tbsp (30 g) Unsalted Butter
- 60 g (1/4 cup) Brown Sugar
- 1 Banana, sliced (โ115 g / 4 oz)
- 1 tbsp (15 ml) Water
- 2 tbsp (15 g) Toasted Coconut Flakes
- Fresh Mint Leaf, for garnish (optional)
Instructions
- Blend Cottage Cheese: Blend well-drained cottage cheese until completely smooth.
- Combine Pudding Base: Blend cottage cheese with bananas, milk, sugar, vanilla, cinnamon, and salt until creamy.
- Portion Pudding: Divide mixture into serving glasses and set aside.
- Make Caramel: Melt butter, add brown sugar, and stir until dissolved.
- Thicken Caramel: Add water and boil, stirring, until slightly thickened.
- Add Banana to Caramel: Cook sliced banana in caramel until softened and glossy.
- Swirl Caramel: Swirl warm caramel into pudding.
- Chill and Set: Refrigerate for at least 2 hours.
- Garnish and Serve: Sprinkle with coconut flakes and mint (optional).
