Description

These Coconut Thumbprint Cookies feature a delicate coconut cookie base filled with a vibrant ginger-lime pineapple filling. They are easy to make and offer a tropical flavor experience.


Ingredients

  • 120g (1 cup) Unsalted Butter, Softened
  • 80g (2 oz) Granulated Sugar
  • 1 Large Egg
  • 1 tsp (5ml) Alcohol-Free Vanilla Extract
  • 100g (1 cup) Shredded Sweetened Coconut
  • 50g (ยฝ cup) Coconut Flour
  • ยผ tsp (1g) Fine Sea Salt
  • 150g (ยฝ cup) Pineapple Jam or Finely Crushed Pineapple, Drained
  • 30g (2 Tbsp) Brown Sugar
  • 1 tsp (5ml) Freshly Grated Ginger
  • Zest of ยฝ Lime plus 1 tsp (5ml) Lime Juice
  • 1 tsp (5ml) Cornstarch mixed with 2 Tbsp (30ml) Cold Water
  • 30g (2 Tbsp) Coconut Sugar
  • 1 Tbsp (15ml) Coconut Cream (for glaze)
  • 2 Tbsp (15g) Toasted Shredded Coconut, for garnish

Instructions

  1. Preheat & Prep: Preheat oven to 175ยฐC (350ยฐF) and line baking sheets with parchment paper.
  2. Cream Butter & Sugar: Cream softened butter and sugar for 2 minutes until light and fluffy.
  3. Add Wet Ingredients: Mix in egg and vanilla until just combined.
  4. Incorporate Dry Ingredients: Gently fold in coconut, coconut flour, and salt.
  5. Chill Dough: Wrap dough and chill for at least 30 minutes.
  6. Make Filling: Combine pineapple jam, brown sugar, ginger, lime zest, and juice in a saucepan.
  7. Thicken Filling: Simmer filling, then whisk in cornstarch slurry until thickened.
  8. Shape Cookies: Scoop dough into 1-inch balls and press an indentation in each.
  9. Fill Thumbprints: Fill indentations with ยฝ teaspoon of filling.
  10. Bake to Perfection: Bake for 12-14 minutes, until edges are golden brown.
  11. Cool & Glaze: Cool cookies, then prepare coconut caramel glaze.
  12. Create Glaze: Melt coconut sugar and coconut cream until smooth.
