- 4–6 small boneless, skinless chicken breasts (500-700g)
- 8–12 slices smoked deli turkey (100-150g)
- 4–6 slices Swiss cheese (100-150g)
- 1 cup breadcrumbs (120g)
- 0.5 cup all-purpose flour (60g)
- 2 large eggs
- 4 tbsp butter (60g)
- Salt, to taste
- Black pepper, to taste
Instructions
- Prep The Chicken: Lay each chicken breast between two sheets of plastic wrap and pound to about 0.25 inch (6mm) thick. Season lightly on both sides with salt and pepper.
- Fill And Roll: Place a slice of smoked turkey and a slice of Swiss cheese on one end of each chicken cutlet. Roll the chicken tightly, starting from the filled end, tucking in the sides as you go to create a compact rollup. Secure with a toothpick if necessary.
- Set Breading Station: Set up three shallow dishes. Fill the first with flour, the second with beaten eggs, and the third with breadcrumbs. Dredge each chicken rollup first in the flour, then coat thoroughly in the beaten egg, and finally roll it in the breadcrumbs, pressing gently to ensure a thick, even coating.
- Cook Rollups: Choose your preferred method to cook your rollups until golden brown and cooked through (internal temperature 165ยฐF / 74ยฐC). (Stovetop: Heat butter in a large skillet over medium heat and pan-fry for 5-7 minutes per side (15-20 minutes total). Oven: Preheat oven to 375ยฐF (190ยฐC) and bake on a lightly greased sheet pan for 20-25 minutes. Air Fryer: Lightly spray with cooking oil and air fry at 375ยฐF (190ยฐC) for 15-18 minutes, flipping halfway.)
- Rest And Serve: Once cooked, remove the rollups from the heat and let them rest for 5 minutes. Remove any toothpicks before slicing or serving whole.
