- 500g ground beef, lean
- 100g plain breadcrumbs
- 120ml whole milk
- 1 large egg
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp kosher salt
- 0.5 tsp black pepper
- 0.5 tsp smoked paprika
- 1 tbsp halal-certified soy sauce
- 150g shredded cheddar cheese
- 100g shredded mozzarella cheese
- 2 large onions, thinly sliced
- 2 tbsp olive oil
- 1 tbsp plant-based butter
- 1 tsp fresh thyme leaves
- 1 tbsp brown sugar
- 1 tbsp apple cider vinegar
Instructions
- Prepare Oven & Dish: Preheat oven to 180ยฐC (350ยฐF) and grease a 23x33cm baking dish.
- Caramelize Onions: Sautรฉ onions in olive oil and butter until golden brown (about 15 minutes).
- Sweeten Onion Jam: Stir in brown sugar, thyme, and apple cider vinegar; cook for 2 minutes.
- Divide Jam: Reserve half of the jam for topping.
- Combine Meatloaf Base: Mix beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, paprika, and soy sauce.
- Add Cheese: Fold in half of the cheddar and mozzarella.
- Assemble Casserole: Spread meat mixture in the dish and shape into a loaf.
- Swirl & Top: Spread reserved jam over the loaf and sprinkle with remaining cheese.
- Bake: Bake for 45-50 minutes, until cheese is bubbly and meat reaches 71ยฐC (160ยฐF).
- Rest & Serve: Let rest for 10 minutes before slicing.
