Description
These Cheese Stuffed Honey BBQ Crockpot Meatballs are a crowd-pleasing appetizer or easy meal. Tender meatballs filled with mozzarella, simmered in a smoky honey BBQ sauce with a chipotle kick, and made easy in a slow cooker.

- 450g (1 lb) Ground Beef (80% Lean)
- 1 Small Onion, Diced (โ100g / 3.5oz)
- 2 Cloves Garlic, Minced
- 60g (1/2 cup) Panko Breadcrumbs
- 1 Large Egg, Beaten
- 1 tsp (5g) Salt
- ยฝ tsp (2.5g) Black Pepper
- 1 tsp (2g) Smoked Paprika
- 115g (4oz) Mozzarella Cheese, Cubed
- 80ml (1/3 cup) Honey
- 80ml (1/3 cup) Ketchup
- 30ml (2 tbsp) Apple Cider Vinegar
- 15ml (1 tbsp) Soy Sauce
- 1 tsp (2g) Chipotle Powder
- 1 tbsp (15ml) Water (Optional)
- 1 tbsp (9g) Toasted Sesame Seeds
- 2 tbsp (6g) Fresh Cilantro, Chopped
Instructions
- Combine Meat Mixture: Gently mix ground beef, onion, garlic, breadcrumbs, egg, salt, pepper, and paprika.
- Form Cheese-Stuffed Balls: Flatten meat, add mozzarella, enclose, and roll into 3-cm (1-inch) balls.
- Arrange in Crockpot: Place meatballs in a single layer in a 2-liter (2-quart) crockpot.
- Make Smoky Chipotle Glaze: Whisk honey, ketchup, vinegar, soy sauce, chipotle powder, and water.
- Slow Cook: Pour half the glaze over meatballs; cook on low 4-5 hours or high 2-3 hours.
- Broil for Finish: Brush with reserved glaze and broil 3-5 minutes.
- Rest & Garnish: Rest 5 minutes, drizzle with glaze, and sprinkle with sesame seeds and cilantro.
Notes
For extra tender meatballs, avoid overmixing the meat. Using 80/20 ground beef adds flavor and moisture.
