Description

This easy, hearty caramelized onion dip features deeply caramelized yellow onions combined with full-fat sour cream and cream cheese, uniquely enhanced with ground sumac, pomegranate molasses, and fresh mint. It’s perfect for satisfying cravings and impressing guests.

Instructions

  1. Caramelize the Onions: Heat 0.25 cup olive oil in a large, heavy-bottomed skillet over medium-low heat. Add 2.2 lbs thinly sliced yellow onions, optional 1 teaspoon granulated sugar, and 1 teaspoon fine sea salt. Stir well to coat. Cook slowly for 45-60 minutes, stirring occasionally, until deeply caramelized to a rich, dark golden-brown and very tender. (If sticking, lower heat and add 1 tablespoon water to deglaze). Remove from heat and cool completely to room temperature (about 30 minutes).
  2. Prepare Garnishes and Combine Dairy: While onions cool, toast 0.25 cup shelled pistachios in a dry pan over medium heat for 3-5 minutes until fragrant; cool then roughly chop. Finely chop 0.25 cup fresh mint leaves. In a medium mixing bowl, combine 1 cup full-fat sour cream, 4 oz softened full-fat cream cheese, 0.5 teaspoon garlic powder, 1 tablespoon ground sumac, and 0.25 teaspoon freshly ground black pepper. Mix thoroughly until creamy and uniform.
  3. Fold in Onions: Once caramelized onions are completely cool, gently fold them into the creamy dairy base. Continue mixing until the onions are evenly distributed, creating a thick dip. Taste and adjust seasoning with additional fine sea salt or black pepper if needed. Transfer to a serving bowl.
  4. Chill and Garnish: Cover the dip and refrigerate for a minimum of 2 hours, ideally overnight, to allow flavors to meld and deepen. Before serving, create a gentle, artistic swirl of 3 tablespoons pomegranate molasses across the surface and scatter the chopped mint and pistachios artfully over it for a vibrant presentation.
