- 30ml Unsalted Butter (2 Tbsp, softened)
- 100g Sharp Cheddar Cheese (3.5oz, grated)
- 100g Mozzarella Cheese (3.5oz, shredded)
- 120g Cream Cheese (ยฝ cup, softened)
- 1 Lemon (zest and 1 Tbsp juice)
- 15ml Honey (1 Tbsp)
- 5ml Finely Grated Ginger (1 tsp, optional)
- 150g Fresh Blueberries (1 cup)
- 30ml Water (2 Tbsp)
- Salt & Black Pepper (to taste)
- 15ml Toasted Sliced Almonds (1 Tbsp, chopped)
Instructions
- Prepare Cream Cheese: Combine cream cheese, lemon zest, juice, honey, and ginger until smooth.
- Make Compote: Cook blueberries, water, honey, and salt until thickened.
- Butter Bread: Butter one side of each bread slice.
- Assemble Sandwiches: Spread cream cheese, layer cheese, add compote, and top with bread.
- Grill Sandwiches: Cook for 3-4 minutes per side, pressing gently.
- Rest & Serve: Rest for 1 minute, cut, and garnish with almonds.
