Instructions
- Prep the Chicken: Preheat oven to 400ยฐF (200ยฐC). Pat chicken thighs thoroughly dry with paper towels, then season generously with salt and black pepper on both sides.
- Sear Chicken Thighs: Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Place chicken skin-side down. Sear for 6-8 minutes, undisturbed, until deeply golden brown and crispy. Flip and sear for another 2 minutes. Remove chicken and set aside.

Every 8-10 minutes, baste with more glaze; watch for a thick, sticky, caramelized coating.
- Rest and Serve: Once cooked, remove the skillet from the oven. Let the chicken rest in the skillet for 5 minutes. Plate, drizzle with remaining pan glaze, and garnish with sesame seeds and scallions for a vibrant finish.
