- 3.3 lbs boneless beef chuck, cut into 1.5 inch cubes

- 4 tbsp tomato paste
- 3 medium carrots, cut into 1 inch pieces
- 2 stalks celery, cut into 1 inch pieces
- 1.5 lbs Yukon Gold potatoes, cut into 1 inch pieces
- 2 tbsp olive oil
- 1/4 cup all-purpose flour
- 5 cups beef stock
- 1 tsp dried thyme
- 2 bay leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup full-fat plain yogurt
- 1 tbsp za’atar spice blend
- 1 tbsp fresh lemon juice
- 1 tsp olive oil (for swirl)
- Pinch salt (for swirl)
- 1/4 cup fresh parsley, chopped
Instructions
- Prepare Beef: Pat beef cubes completely dry. Season generously with half the salt and all the pepper. Brown beef in batches in 1 tbsp olive oil in a large Dutch oven over medium-high heat until deeply seared; remove beef to a plate.
- Sautรฉ Aromatics: Add remaining olive oil to the pot. Sautรฉ diced onion for 5-7 minutes. Add minced garlic and cook for 1 minute. Stir in tomato paste and cook for 2 minutes.
- Build Stew Base: Sprinkle flour over the vegetables and stir for 1 minute. Gradually whisk in beef stock, scraping up browned bits from the bottom. Bring to a gentle simmer.
- Simmer Stew: Return browned beef to the pot. Add carrots, celery, potatoes, dried thyme, bay leaves, and remaining salt. Reduce heat to low, cover, and simmer for 2 to 2.5 hours, or until the beef is fork-tender.
- Prepare Za’atar Swirl: While stew simmers, whisk together plain yogurt, za’atar spice, fresh lemon juice, 1 tsp olive oil, and a pinch of salt until smooth. Set aside until serving.
- Serve and Garnish: Remove bay leaves before serving. Ladle stew into bowls and drizzle generously with the creamy Za’atar Yogurt Swirl, then garnish with chopped fresh parsley.
