- 2 Tbsp white miso paste

- 2 cloves garlic, minced
- 1 tsp sriracha (optional)
- 1 Tbsp olive oil
- 1 tsp toasted sesame oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium red onion, sliced
- 200 g (7 oz) pineapple chunks
- 2 Tbsp sesame seeds, toasted
- 2 Tbsp cilantro, chopped
- Lime wedges, for serving
Instructions
- Preheat and Prep: Preheat oven to 200ยฐC (400ยฐF) and line a sheet pan with parchment paper.
- Whisk Glaze: Combine pineapple juice, miso, soy sauce, brown sugar, ginger, garlic, sriracha, olive oil, and sesame oil.
- Prepare Chicken: Pat chicken dry, season, and brush with half the glaze.
- Arrange Vegetables: Spread peppers, onion, and pineapple on the sheet pan; drizzle with glaze.
- Assemble and Glaze: Arrange chicken skin-side up on vegetables; brush with remaining glaze.
- Bake: Bake for 35-40 minutes, basting halfway through.
- Final Glaze: Brush with glaze during the last 5 minutes and sprinkle with sesame seeds.
- Rest and Garnish: Rest for 5 minutes, garnish with cilantro, and serve with lime.
