Description

- 80g (2 oz) Granulated Sugar
- 1 Large Egg
- 1 tsp (5ml) Alcohol-Free Vanilla Extract
- 100g (1 cup) Shredded Sweetened Coconut
- 50g (ยฝ cup) Coconut Flour
- ยผ tsp (1g) Fine Sea Salt
- 150g (ยฝ cup) Pineapple Jam or Finely Crushed Pineapple, Drained
- 30g (2 Tbsp) Brown Sugar
- 1 tsp (5ml) Freshly Grated Ginger
- Zest of ยฝ Lime plus 1 tsp (5ml) Lime Juice
- 1 tsp (5ml) Cornstarch mixed with 2 Tbsp (30ml) Cold Water
- 30g (2 Tbsp) Coconut Sugar
- 1 Tbsp (15ml) Coconut Cream (for glaze)
- 2 Tbsp (15g) Toasted Shredded Coconut, for garnish
Instructions
- Preheat & Prep: Preheat oven to 175ยฐC (350ยฐF) and line baking sheets with parchment paper.
- Cream Butter & Sugar: Cream softened butter and sugar for 2 minutes until light and fluffy.
- Add Wet Ingredients: Mix in egg and vanilla until just combined.
- Incorporate Dry Ingredients: Gently fold in coconut, coconut flour, and salt.
- Chill Dough: Wrap dough and chill for at least 30 minutes.
- Make Filling: Combine pineapple jam, brown sugar, ginger, lime zest, and juice in a saucepan.
- Thicken Filling: Simmer filling, then whisk in cornstarch slurry until thickened.
- Shape Cookies: Scoop dough into 1-inch balls and press an indentation in each.
- Fill Thumbprints: Fill indentations with ยฝ teaspoon of filling.
- Bake to Perfection: Bake for 12-14 minutes, until edges are golden brown.
- Cool & Glaze: Cool cookies, then prepare coconut caramel glaze.
- Create Glaze: Melt coconut sugar and coconut cream until smooth.
- Finish Touches: Drizzle glaze and sprinkle with toasted coconut.
