Description

These Matcha Swirled Rice Krispie Chocolate Chip Cookies combine the crunch of Rice Krispies with rich chocolate chips and a vibrant matcha ganache for a visually stunning and flavorful treat. The subtle bitterness of matcha balances the sweetness, creating an addictive bite.

Ingredients

Scale
  • 115 g (0.5 cup) Unsalted Butter, Softened: Ensure it’s at room temperature for a light texture.
  • 100 g (0.5 cup) Granulated Sugar: Provides sweetness and crisp edges.
  • 110 g (0.5 cup) Packed Light Brown Sugar: Adds moisture and a molasses flavor.
  • 1 Large Egg: Binds ingredients and adds richness.
  • 1 tsp (5 ml) Alcohol-Free Vanilla Extract: Enhances the flavor profile.
  • 130 g (1 cup) All-Purpose Flour: Provides structure; avoid overmixing.
  • 0.5 tsp (2.5 ml) Baking Soda: Helps cookies rise.
  • 0.25 tsp (1.25 ml) Salt: Balances sweetness.
  • 150 g (1.5 cups) Rice Krispie Cereal: Adds crunch and texture.
  • 120 g (0.67 cup) Semi-Sweet Chocolate Chips: Provides chocolatey goodness.
  • 100 g (3.5 oz) White Chocolate, Chopped: Essential for the matcha ganache.
  • 30 ml (2 tbsp) Heavy Cream: Creates a smooth ganache.
  • 1 tsp (2 g) Matcha Powder: For flavor and vibrant color.
  • Extra White Chocolate Shavings: For garnish.

Instructions

  1. Prep Oven & Pans: Preheat oven to 175ยฐC (350ยฐF) and line baking sheets with parchment paper.
  2. Cream Butter & Sugars: Cream butter and sugars for 3 minutes until light and fluffy.
  3. Add Egg & Vanilla: Beat in egg and vanilla extract until combined.
  4. Combine Dry Ingredients: Whisk together flour, baking soda, and salt.
  5. Combine Wet & Dry: Gradually add dry ingredients to wet, mixing until just combined.
  6. Fold in Add-Ins: Gently fold in Rice Krispies and chocolate chips.
  7. Make Matcha Ganache: Melt white chocolate and cream, then whisk in matcha powder. Cool until spreadable.
  8. Scoop & Swirl: Scoop dough, create indentations, fill with ganache, and swirl.
  9. Bake Cookies: Bake for 10-12 minutes, until edges are golden brown.
  10. Cool & Decorate: Cool on sheets, then racks; drizzle with ganache and add shavings.

Notes

For best results, use softened (not melted) butter and avoid overmixing the dough. Quality matcha powder enhances the flavor.
