- 1 tsp Baking Powder: for a light and airy batter
- 1 tsp Salt, plus a pinch for the glaze
- ยฝ tsp Black Pepper
- 120ml (ยฝ cup) Ice-Cold Water
- Vegetable Oil for Deep-Frying (about 2L / 8 cups)
- 80ml (ยผ cup) Raw Honey: provides sweetness
- 30ml (2 tbsp) Fresh Lime Juice: balances sweetness
- 1 tsp Lime Zest
- 30ml (2 tbsp) Full-Fat Coconut Milk: adds creamy texture
- 1 tsp Red Chili Flakes (adjust to taste)
- 1 tsp Garlic Paste
- 30g (ยผ cup) Toasted Shredded Coconut
- 2 tbsp Chopped Fresh Cilantro
Instructions
- Prepare Shrimp: Pat shrimp dry and season lightly.
- Make Batter: Whisk flour, cornstarch, baking powder, salt, and pepper with ice water.
- Heat Oil: Heat oil to 180ยฐC (350ยฐF).
- Fry Shrimp: Dip shrimp in batter and fry in batches until golden brown.
- Drain Shrimp: Transfer fried shrimp to a paper-towel-lined tray.
- Make Glaze: Combine honey, lime juice, zest, coconut milk, chili flakes, garlic, and salt.
- Simmer Glaze: Simmer glaze for 3 minutes until thickened.
