Ingredients

  • 4 brioche slider buns (60g / 2oz each)
  • 300g (10oz) boneless, skinless chicken breasts, sliced into cutlets
  • 1 ½ tbsp (22ml) olive oil
  • Salt and pepper to taste
  • 2 tbsp (30ml) honey
  • 1 tbsp (15ml) Dijon mustard
  • 1 tbsp (15ml) whole-grain mustard
  • 1 tsp (5g) white miso paste
  • 1 tsp (5ml) soy sauce
  • 1 tbsp (15g) toasted sesame seeds
  • ¼ cup (10g) microgreens or arugula

Instructions

  1. Prepare Buns & Oven: Preheat oven to 200°C (400°F). Toast buns for 5 minutes.
  2. Make Glaze: Whisk together honey, mustards, miso, and soy sauce.
  3. Season Chicken: Season chicken cutlets with salt and pepper.
  4. Sear Chicken: Sear chicken in olive oil for 2 minutes per side.
  5. Glaze & Caramelize: Brush with glaze and cook 2-3 minutes, turning once.
  6. Bake Chicken: Bake for 5 minutes, until cooked through (74°C / 165°F).
  7. Rest & Glaze Buns: Brush bun bottoms with glaze.
  8. Assemble Sliders: Place chicken on buns, top with microgreens and sesame seeds.
  9. Serve: Serve immediately.
