- 400g (14oz) Mixed Baby Mushrooms, cleaned and dried
- 2 Tbsp (30ml) Olive Oil
- 1 tsp (5g) Sea Salt
- ยฝ tsp (2.5g) Black Pepper
- 2 Tbsp (30g) White Miso Paste
- 1 Tbsp (15ml) Maple Syrup
- 1 tsp (5ml) Soy Sauce
- 1 tsp (5ml) Rice Vinegar
- 1 tsp (5g) Freshly Grated Ginger
- 1 Clove Garlic, minced
- ยผ tsp (0.5g) Chili Flakes (optional)
- 1 tsp (5ml) Toasted Sesame Oil
- 1 tsp (5g) Toasted Sesame Seeds, plus extra for garnish
- 1 Tbsp (5g) Chopped Scallions
Instructions
- Prep Mushrooms: Clean and dry mushrooms; avoid soaking.
- Season Mushrooms: Toss mushrooms with olive oil, salt, and pepper.
- First Air Fry: Air fry at 180ยฐC (350ยฐF) for 12 minutes, shaking halfway.
- Make Glaze: Whisk miso paste, maple syrup, soy sauce, rice vinegar, ginger, garlic, chili flakes, and sesame oil.
- Simmer Glaze: Simmer glaze over medium-low heat for 3-4 minutes until thickened.
- Glaze Mushrooms: Toss air fried mushrooms with half of the glaze.
- Second Air Fry: Air fry glazed mushrooms for 2 minutes to caramelize.
- Plate & Garnish: Arrange mushrooms, drizzle with remaining glaze, and garnish with sesame seeds and scallions.
- Serve: Serve immediately while warm.
