- 4 cod fillets (600g / 1.25 lb), 150g (5oz) each
- 0.5 tsp (2g) salt
- 0.25 tsp (1g) black pepper
- 2 tbsp (30g) all-purpose flour
- 2 tbsp (30ml) olive oil
- 3 tbsp (45g) unsalted butter
- 2 shallots (50g / 1.8oz), minced
- 1 garlic clove, minced
- 0.5 tsp (2g) saffron threads
- 2 tbsp (30ml) warm water
- 2 tbsp (30ml) white wine vinegar
- 0.5 cup (120ml) fish stock
- 2 tbsp (30ml) lemon juice
- 1 lemon zest
- 2 tbsp (15g) toasted almond slivers
- 1 tbsp (5g) fresh dill or parsley, chopped
Instructions
- Prepare Cod: Pat cod dry, season with salt and pepper, and lightly dredge in flour.
- Sear Cod: Sear cod in hot oil and butter for 3-4 minutes per side until golden and flaky.
- Sautรฉ Aromatics: Sautรฉ minced shallots and garlic in butter until fragrant.
- Infuse with Saffron: Add saffron-water mixture and stir for 1 minute.
- Deglaze & Reduce: Deglaze with vinegar and reduce for 1 minute.
- Build Sauce: Add fish stock and simmer for 3-4 minutes until thickened.
- Finish Sauce: Whisk in lemon juice and zest; adjust seasoning.
- Combine & Serve: Return cod to skillet, coat with sauce, and warm through.
- Plate & Garnish: Plate cod, drizzle with sauce, sprinkle with almonds and dill.
Notes
Patting the cod dry is crucial for a good sear. Don’t overcrowd the pan when searing.
