Ingredients
- 500g (1lb 1oz) Ground Chicken, halal-certified
- 100g (3.5oz) Grated Parmesan Cheese, freshly grated, halal-certified
- 100g (3.5oz) Mozzarella Cheese, low-moisture, halal-certified
- 150g (5oz) Medium Onion, finely diced
- 15g (0.5oz) Garlic, minced
- 70g (ยฝ cup) Plain Breadcrumbs
- 50g (1.75oz) Large Egg
- 30ml (2 Tbsp) Olive Oil, divided
- 15ml (1 Tbsp) Milk (optional)
- 5g (1 tsp) Dried Thyme
- 5g (1 tsp) Dried Oregano
- 2g (ยฝ tsp) Black Pepper, freshly ground
- 2g (ยฝ tsp) Salt
- 30g (2 Tbsp) Unsalted Butter, melted
- 30g (2 Tbsp) Extra Grated Parmesan Cheese
- 30g (2 Tbsp) Extra Breadcrumbs
- Fresh Parsley, chopped, for garnish
Instructions
- Prep & Preheat: Preheat oven to 190ยฐC (375ยฐF) and line a baking sheet with parchment.
- Sautรฉ Aromatics: Sautรฉ diced onion and minced garlic in olive oil until translucent. Cool completely.
- Combine Mixture: Gently combine chicken, onion-garlic, Parmesan, breadcrumbs, egg, milk (if using), thyme, oregano, salt, and pepper.
- Shape & Trench: Shape mixture into a rectangle and carve a lengthwise trench.
- Insert Mozzarella: Lay mozzarella sticks in the trench and seal with meat.
- Prepare Topping: Combine melted butter, Parmesan, breadcrumbs, and olive oil.
- Bake: Top loaf with mixture and bake for 35-40 minutes, until internal temp reaches 74ยฐC (165ยฐF).
- Rest & Serve: Let rest for 10 minutes before slicing and garnish with parsley.
