Ingredients
- 2 1/2 cups bread flour
- 1 tsp instant yeast
- 1 tsp granulated sugar
- 1 tsp fine sea salt
- 1 tbsp olive oil
- 3/4 cup warm water + 1 tbsp warm water
- 14 oz jarred roasted red peppers, drained
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/2 cup vegetable broth
- Salt and pepper to taste
- 6 oz low-moisture mozzarella cheese, shredded
- Fresh basil leaves for garnish
Instructions
- Combine Dough Ingredients: In a large mixing bowl, whisk together the bread flour, instant yeast, granulated sugar, and salt. In a separate cup, combine the warm water and olive oil. Pour the liquid mixture into the dry ingredients and mix with a spoon or your hands until a shaggy ball of dough forms.
- Knead and Rise: Turn the dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm spot for 60-90 minutes, or until doubled in size.
- Prepare Red Pepper Sauce: While the dough rises, heat 1 tbsp olive oil in a saucepan over medium heat. Add the diced onion and cook for 5-7 minutes until soft. Add the minced garlic and tomato paste and cook for 2 more minutes. Stir in the drained red peppers, smoked paprika, and dried oregano; pour in the vegetable broth and bring to a simmer.
- Blend and Finish Sauce: Reduce heat to low, cover, and cook for 10 minutes to allow flavors to meld. Carefully transfer the mixture to a blender and blend until completely smooth. Season with salt and pepper and set aside.
- Preheat Oven: Preheat the oven to 450ยฐF (230ยฐC) with a pizza stone or heavy baking sheet inside on the middle rack for at least 30 minutes.
- Shape Pizza: Gently punch down the risen dough and transfer it to a lightly floured surface. Stretch or roll the dough into a 12-14 inch circle. Carefully transfer the dough to a piece of parchment paper.
- Top and Bake: Spoon about 1/2 cup of the red pepper sauce evenly over the dough, leaving a border for the crust. Top evenly with shredded mozzarella cheese.
