  • 15ml extra virgin olive oil, for garnish
  • 5g fresh dill or parsley, chopped (for garnish)

Instructions

  1. Slice Cucumbers: Wash and slice the cucumbers to a thickness of 2-3mm using a mandoline or sharp knife.
  2. Salt and Drain: Place the slices in a colander set over a bowl, sprinkle with 5g (1 teaspoon) fine sea salt, and toss gently. Let drain for 20-30 minutes to remove excess water.
  3. Prepare Dressing: In a separate bowl, whisk together the yogurt, smoked paprika, minced garlic, lemon juice, remaining 5g (1 teaspoon) fine sea salt, and black pepper until smooth.
  4. Remove Excess Water: After draining, gently squeeze the cucumbers to release any remaining liquid or pat them very dry with a clean kitchen towel.
  5. Combine and Chill: Add the dried cucumber slices to the dressing bowl and toss to coat evenly. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
  6. Garnish and Serve: Serve the chilled salad drizzled with olive oil and sprinkled with fresh herbs and an optional dusting of extra smoked paprika.
