Description

An easy bisquick peach cobbler featuring a fluffy topping over juicy peaches, with a special cardamom-spiced brown sugar caramel swirl.

Ingredients

Scale
  • 1 kg (2.2 lbs) fresh peaches, peeled, pitted, and sliced
  • 350 g (3 cups) Bisquick baking mix
  • 115 g (1/2 cup) unsalted butter, melted
  • 55 g (1/4 cup) unsalted butter, softened
  • 240 ml (1 cup) whole milk, room temperature
  • 175 g (3/4 cup) granulated sugar, divided
  • 150 g (3/4 cup) light brown sugar, packed
  • 60 ml (1/4 cup) heavy cream
  • 5 ml (1 teaspoon) ground cardamom, divided
  • 2.5 ml (1/2 teaspoon) ground cinnamon
  • 2.5 ml (1/2 teaspoon) alcohol-free vanilla extract
  • 1 ml (1/4 teaspoon) fine sea salt

Instructions

  1. Preheat Oven and Prepare Dish: Preheat the oven to 190ยฐC (375ยฐF). Pour the 1/2 cup melted butter into a 9×13 inch baking dish, ensuring the bottom is evenly coated.
  2. Make Cardamom Caramel Sauce: In a medium saucepan, combine the softened butter, brown sugar, heavy cream, 1/2 teaspoon cardamom, cinnamon, and salt. Cook over medium heat, stirring for 3-5 minutes until the sugar dissolves and the mixture simmers. Remove from heat and stir in the vanilla extract.
  3. Prepare Bisquick Batter: In a large mixing bowl, whisk together the Bisquick baking mix, whole milk, and 75 g (1/3 cup) of the granulated sugar until just combined. Pour the batter evenly over the melted butter in the prepared baking dish.
  4. Season Peaches: In a separate bowl, toss the sliced peaches with the remaining 100 g (2/3 cup) granulated sugar and 1/2 teaspoon ground cardamom until coated. Spoon the sugared peaches over the batter in the baking dish.
  5. Drizzle and Swirl Caramel: Drizzle about two-thirds of the prepared caramel sauce over the peaches and batter. Gently swirl the caramel through the peaches and into the batter using a small knife or skewer, being careful not to overmix.
  6. Bake Cobbler: Bake in the preheated oven for 40-50 minutes, or until the topping is golden brown and the peach filling is visibly bubbly around the edges. If browning too quickly, loosely tent the dish with aluminum foil.
  7. Cool Before Serving: Let the cobbler cool in the dish for at least 15-20 minutes before serving. This allows the juices to thicken and the sauce to set slightly.
  8. Final Drizzle and Serve: Warm the remaining caramel sauce and drizzle generously over individual portions of warm cobbler. Finish with a light dusting of remaining ground cardamom for aroma.

Notes

To avoid a dense topping, do not overmix the Bisquick batter; mix only until just combined. The melted butter base helps create a crispy crust. If the caramel sauce hardens while cooling, gently warm it before drizzling. The resting period is crucial for preventing a watery consistency.
