Ingredients
- 200 g rolled oats
- 720 mL unsweetened almond milk
- 60 mL maple syrup
- 5 mL alcohol-free vanilla extract
- Pinch fine sea salt
- 150 g pitted Medjool dates
- 1 medium ripe pear, peeled, cored, and roughly chopped
- 60 mL water
- 2.5 mL ground cinnamon
- 1.25 mL ground ginger
- 0.5 mL ground nutmeg
Instructions
- Prepare Blended Oat Base: In a high-speed blender, combine the rolled oats, unsweetened almond milk, maple syrup, vanilla extract, and salt. Blend until completely smooth and creamy, about 1-2 minutes. Pour the mixture into an airtight container and refrigerate for at least 4 hours, or overnight, to allow it to thicken completely.
- Make Spiced Pear-Date Caramel: If dates are firm, soak in hot water for 10 minutes, then drain. In a small saucepan, combine the dates, chopped pear, water, cinnamon, ginger, and nutmeg. Bring to a gentle simmer over medium heat, then reduce to low and cook for 8-10 minutes, until the pear is very tender and dates are softened.
- Blend Caramel: Transfer the cooked pear and date mixture to a high-speed blender or food processor. Blend until completely smooth and thick, adding 1-2 tablespoons more water if needed to achieve a pourable consistency. Set aside to cool to room temperature; it will thicken further as it cools.
- Assemble and Swirl: Once the blended oats are chilled and thickened, divide them among 2-3 serving bowls. Drizzle about half of the cooled caramel over the top of the oats in each bowl. Use a spoon or skewer to gently swirl the caramel into the oats.
- Garnish and Serve: Drizzle the remaining caramel over the top of each serving. Dust lightly with an additional pinch of ground cinnamon. Serve immediately for best texture and flavor.
Notes
Use rolled oats, not quick oats, for the best texture. The maple syrup in the oat base can be omitted for less sweetness, as the date caramel provides plenty. If using firm dates, soak them in hot water for 10 minutes before blending to soften them. The liquid base can be swapped for oat milk, soy milk, full-fat coconut milk, or dairy milk.
