- 4 medium Russet or Yukon Gold potatoes, approx 1 kg (2.2 lb)
- 2 tablespoons olive oil

- 1 teaspoon garlic powder
- 1 teaspoon paprika
Instructions
- Prep Potatoes: Wash potatoes. Place each between two spoons or chopsticks and slice thinly, stopping at spoons to keep the bottom intact, ensuring perfectly fanned cuts.
- Soak And Dry: For super crispy potatoes, soak the scored potatoes in cold water for 15-30 minutes. Pat them very dry afterward, ensuring they are moisture-free.
- Season Potatoes: In a bowl, toss the dry potatoes with 2 tablespoons olive oil, salt, pepper, garlic powder, and paprika. Gently separate the layers to coat all crevices evenly.
- Bake Potatoes: Arrange the seasoned potatoes in a single layer on a 9×13 baking dish or sheet. Bake at 200 degrees C (400 degrees F) for 30-45 minutes, looking for golden-brown edges. If they look dry, drizzle with extra oil after 20 minutes.
- Flip And Finish: (Optional) For even crispness, carefully flip the potatoes halfway through baking. Continue until they are very tender and crispy.
