Description

Our accordion potatoes recipe transforms simple spuds into unbelievably crispy, flavorful bites with a gorgeous fanned texture, perfect as a wholesome, kid-friendly side dish for weeknight meals. This clever technique delivers maximum deliciousness with minimal effort.

Ingredients

Scale
  • 4 medium Russet or Yukon Gold potatoes, approx 1 kg (2.2 lb)
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions

  1. Prep Potatoes: Wash potatoes. Place each between two spoons or chopsticks and slice thinly, stopping at spoons to keep the bottom intact, ensuring perfectly fanned cuts.
  2. Soak And Dry: For super crispy potatoes, soak the scored potatoes in cold water for 15-30 minutes. Pat them very dry afterward, ensuring they are moisture-free.
  3. Season Potatoes: In a bowl, toss the dry potatoes with 2 tablespoons olive oil, salt, pepper, garlic powder, and paprika. Gently separate the layers to coat all crevices evenly.
  4. Bake Potatoes: Arrange the seasoned potatoes in a single layer on a 9×13 baking dish or sheet. Bake at 200 degrees C (400 degrees F) for 30-45 minutes, looking for golden-brown edges. If they look dry, drizzle with extra oil after 20 minutes.
  5. Flip And Finish: (Optional) For even crispness, carefully flip the potatoes halfway through baking. Continue until they are very tender and crispy.

Notes

Choose firm, blemish-free, similar-sized organic potatoes for uniform cooking. Use fresh spices for vibrant flavor. For Keto/Low-Carb, use large radishes or turnips, scored similarly (note texture change). This recipe is naturally gluten-free, vegan, and vegetarian. Air fryer option: cook at 190 degrees C (375 degrees F) for 15-25 minutes, shaking basket every 5-7 minutes. If potatoes appear dry, drizzle with extra olive oil. If bland, add more salt or favorite herb blend. If soggy, ensure a single layer (not overcrowded) and increase cooking time or oven temperature slightly for the last 10 minutes.
